Insole Court Trust
Proposed Initiative: Eco Coffee and Ice Cream Cart, promoting sustainable practices and local producers while increasing revenue.
Insole Court is a beautiful historic mansion house near Cardiff. It currently has an on site café located inside the Victorian Potting Shed, but the nature of the space and its listed status means capacity is very limited with no room for expansion. On busy days and during events the small service area is quickly overwhelmed, with popular orders for takeaway coffee and ice cream restricting capacity to market and deliver the café’s full menu.
The proposed Eco Coffee and Ice Cream Cart aims to solve this problem by serving coffee and ice cream from the historic stable yard. The eco coffee tricycle will provide a flexible second servery that will maximise commercial revenue, improve visitor experience and create more opportunity to promote sustainable practices and local produce in the main café. It could also be used to showcase Insole Court at external events around Cardiff.
The idea was pitched by a barista currently working at Insole Court who saw how street food style catering could be implemented at the site. The judges were impressed by the attention to detail and flexibility, and could see how it would inspire other member venues.
A great low carbon revenue generator, clearly addressing an existing problem with F&B as well as taking the venue off-site to engage with the public and increase income in Cardiff.
